Here’s a simple recipe for Grilled Balsamic Chicken Salad.
Ingredients:
- 2 boneless, skinless chicken breasts
- 1/4 cup balsamic vinegar
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- Salt and pepper to taste
- 6 cups mixed salad greens
- 1 cup cherry tomatoes, halved
- 1/2 cup sliced cucumber
- 1/4 cup crumbled feta cheese
- 1/4 cup sliced red onion
- Balsamic vinaigrette dressing (optional)
Instructions:
In a bowl, whisk together balsamic vinegar, olive oil, minced garlic, salt, and pepper. Pour the marinade over the chicken breasts and let them marinate for at least 30 minutes in the refrigerator.
Preheat your grill to medium-high heat. Remove the chicken breasts from the marinade and discard the excess marinade.
Grill the chicken breasts for about 6-8 minutes per side, or until cooked through and no longer pink in the center. Remove from the grill and let them rest for a few minutes before slicing.
While the chicken is resting, prepare your salad ingredients by washing and chopping the salad greens, cherry tomatoes, cucumber, and red onion.
Arrange the salad greens on serving plates and top with the sliced grilled chicken, cherry tomatoes, cucumber, red onion, and crumbled feta cheese.
Drizzle with balsamic vinaigrette dressing, if desired, and serve immediately.
Enjoy your delicious Grilled Balsamic Chicken Salad!
