Here’s a simple recipe for Lemon Herb Roast Chicken.
Ingredients:
- 1 whole chicken (about 3-4 pounds)
- 2 lemons
- 4 cloves of garlic, minced
- 2 tablespoons of olive oil
- Salt and pepper, to taste
- Fresh herbs (such as rosemary, thyme, and parsley), chopped
Instructions:
Preheat your oven to 375°F (190°C).
Rinse the chicken inside and out, then pat it dry with paper towels. Place the chicken in a roasting pan or baking dish.
Zest one of the lemons and set the zest aside. Cut the zested lemon in half and squeeze the juice over the chicken,
then place the lemon halves inside the cavity of the chicken. In a small bowl, mix together the minced garlic, olive oil, salt, pepper, and chopped fresh herbs.
Rub the herb mixture all over the chicken, making sure to coat it evenly. Slice the remaining lemon into thin slices and arrange them around the chicken in the roasting pan.
Roast the chicken in the preheated oven for about 1 hour and 15 minutes to 1 hour and 30 minutes, or until the juices run clear and the internal temperature of the chicken reaches 165°F (75°C) when measured with a meat thermometer inserted into the thickest part of the thigh.
Once cooked, remove the chicken from the oven and let it rest for 10-15 minutes before carving.
Serve the Lemon Herb Roast Chicken with your favorite side dishes and enjoy! This recipe yields a flavorful and juicy roast chicken with a hint of citrus and herbs that’s perfect for any occasion.
